Love this minmalist approach to fennel! That observation about braising unlocking the sweet tendernes is spot on. Most recipes overcomplicte things but letting fennel caramelize slow with just Parm and rosemary lets the bulb's natural anise flavor actually shine through. I tried braising fennel with a full spice cabinet once and it was just muddy, but the restrained ingredient list here is genius.
